I don't like to cook. I am not young and have been cooking for many, many years. So mostly we go out. I know, expensive. But I have it down to a science. Of course Del Taco 3 nights a week isn't really healthy, but hey, it's cheap and they have cookies.
Tonight I cooked. I found a recipe on Pinterest and actually used it. I have a lot of recipes from Pinterest but this one actually got cooked. Yeah for me.
So this was fast and very easy and you can adapt it to your liking. I did not serve it from the stove top but put it in a casserole dish and baked it for 30 minutes at 350. It was delicious. The recipe calls for 1 cup rice but I used 3 cups. I used only 1 pound hamburger and mixed chilies, diced tomatoes corn and black beans together. You can adjust this for your size family. I am serving 5.
